Next let's take the water and into it, dissolve the sodium carbonate and salt to make our KANSUI !!!
Very slowly add the kansui to the mixing bowl while mixing the flour constantly. Break any huge chunks of dough.
Once the dough starts coming together, start kneading it for 10 mins.
Now we got to tightly wrap up the dough plastic wrap to avoid oxidation. If you don't have a plastic wrap you can leave the dough in the bowl and cover the bowl with a damp towel. Rest the dough for 15mins.
Remove the wrapper and knead again for 15mins. Wrap up the dough again with plastic wrap and let rest for 2-3hrs in room temperature or 8-16hrs in the refrigerator. This gives rise to strong gluten development.
It's time to roll this smooth bowl tastiness out. Take the dough out of the wrapper and place it on a flat surface, preferably a wooden one. Start by gently pressing the dough with your hand to make a flat disc. After pressing it to a 1/3rd finger length distance, take out your rolling pin and roll the dough out to a thickness of 4 post-it notes (like our favorite pasta master Evan Funke says!).
Dust corn starch or potato starch generously on top of it. Start folding it to thickness of 3/4th of your knifes length. When you start folding start dusting corn starch or potato starch on top of the undusted side of the dough. Fold the dough gently onto itself.
Take a sharp knife. Now by sharp we mean paper slicing sharp! Cut the dough as thinly as you can (as thing as ramen noodles). I use a dough cutter as a scale to cut easily.
Separate the strands of noodles and slightly dust corn or potato starch. This helps to prevent sticking. Hold one third of the strands at the center. Slowly lay down the strands in an air tight box while twisting to form a nest. Repeat this to make 3 nests.
Leave them in the refrigerator overnight to taste some homemade authentic ramen noodles! Although you can boil them immediately for about 3mins. The boiling time depends on the thickness of your ramen. If its around 3mins then you have achieved the perfect thickness!
